recipes from her new book Superfoods
PARSLEY GREEN-GLOW SMOOTHIE
I spent a lot of time perfecting a smoothie that not only gives me loads of energy, but also makes my skin, hair and eyes glow! Thus, the Parsley Green- Glow was born.
For one serving you will need:
A large handful of chard, spinach or kale
A small handful of fresh flat-leaf parsley
A small handful of rocket
1⁄2 banana
1⁄2 pear
1⁄2 papaya
180ml coconut water
To make:
Shove everything into a blender or food processor and whizz until smooth. Drink immediately or pour into your on-the-go container to enjoy later.
Parsley can actually boost your intake of iron and vitamin K, both of which are nutrients vital for healthy blood. Just two tablespoons of chopped parsley contain 153 percent of the RDA for vitamin K.
BLUEBERRY AND SPINACH SMOOTHIE
I use Mason jars for my smoothies on the go, as they have great lids to stop any leaking. This is one of my favourite smoothies because it contains bee pollen and baobab, which in turn equate to protein, enzymes and antioxidants.
For one serving you will need:
120ml coconut milk (or any other plant-based milk)
90g frozen blueberries
1⁄2 banana (frozen is good, too)
Handful of spinach, chard or kale
1 date, pitted
1 tablespoon bee pollen
1 tablespoon baobab powder
To make:
Throw everything into a blender or food processor and give it a good whizz until smooth. Drink immediately or pour into your on-the-go container to enjoy later.
Studies have shown that consuming spinach in smoothie or juice form is the healthiest way to get its amazing benefits into your body.
CARROT, PEAR AND GINGER JUICE
When I make this juice,
I like to put the kale in the juicer first, before the other ingredients, as it helps to extract more kale goodness.
For one serving you will need:
2 handfuls of kale (optional)
4 carrots
1 pear
1⁄2 lemon, peeled
2.5cm piece of fresh ginger
Juicer
To make:
Push all the ingredients through a juicer one at a time and enjoy.
As far as fruits are concerned, pears are low in sugar and therefore a great way to satiate your sweet tooth without terrorising your blood sugar.
