Cajun chicken with smashed avocado and rainbow carrots
A unique spin on Easter lunch!
You will need:
1 chicken breast
½ tsp of Cajun spice
1 tsp olive oil
½ an avocado
½ a chilli thinly sliced
Squeeze of lemon juice
1 orange, purple and yellow carrot
¼ of a spring onion
¼ cup of uncooked wild rice
Salt and pepper
Method
1. Place the rice in a saucepan with 1 cup of water (1:4 ratio of rice to water). When the water has reached a boil, lower the heat to maintain a slow but steady simmer and cover the pan. Simmer for approximately 45mins or until tender
2. Pre-heat oven to 180 degrees
3. Rub the chicken with the olive oil and Cajun seasoning until completely coated, place into the preheated oven for 15-20 min until cooked through
4. Slice the orange, purple and yellow carrots thinly (either with a mandolin or carefully with a sharp knife!), blanch the slices, taking care not to overcook
5. Mash the avocado and lemon juice together with a fork, and season well with salt and pepper
6. Serve the rice with the chicken sliced on top, add the avocado and rainbow carrots, garnish with the sliced chilli and spring onions
Easter cookies
Delicious Easter Cookies from Fresh Fitness Food
You will need:
50g oats
70g banana
100g desiccated coconut
5g mixed spice
Pinch of salt
100g dark chocolate/ white chocolate
2 sprigs of thyme
1 lemon (zested)
Method
1. Pre-heat an oven to 180°C
2. Place desiccated coconut, mixed spice, salt and oats into a blender
3. Blend until a rough powder
4. Peel the banana and add into the oat mix
5. Blend the mix again to form a dough
6. Place between two sheets of baking paper and roll out to just over ½ cm thick
7. With an egg shaped cuter, cut out the cookies, approx. 20
8. Place onto a greaseproof lined tray
9. Bake in oven for 5 minutes on 180°C
To make the sauce:
1. Place a pan of water onto the stove and bring to the boil
2. Place the chocolate into a metal or glass bowl and place over the hot water
3. Stir the dark or white chocolate until it melts
4. Dip the cookies into the white or dark chocolate then sprinkle with the lemon zest and the thyme
5. Leave to cool
