Spaghetti Bolognese
Serves 4
Ingredients
500g Meet the Alternative Beef Style Mince
Drizzle of olive oil
2 garlic cloves, crushed
2 carrots, finely chopped
3tbsp tomato puree
400g tin chopped tomatoes
175ml red wine / vegetable stock
1 bay leaf
1 tsp oregano or mixed herbs
Salt and pepper
Basil leaves (to serve)
Spaghetti
Method
1. Boil the carrots until soft.
2. Heat the oil in a pan and saute the garlic and boiled carrots together for 2 minutes.
3. Add the tomato puree and cook for a further minute.
4. Add the tin of tomatoes, red wine or vegetable stock, herbs and seasoning. Stir well.
5. Add the frozen Beef Style Mince and mix into the sauce. Simmer for 10-12 minutes, stirring occasionally. If the sauce becomes too thick, add starch water from the spaghetti to thin it.
6. Cook spaghetti following the pack instructions.
7. Stir the spaghetti into the Bolognese and serve topped with basil leaves. Serve with garlic bread if you like.
Chicken Style Korma with Rice
Serves 4
Ingredients
300g pack of Meet the Alternative Chicken Style Pieces
1 tbsp of sunflower oil
1 large onion, chopped
2 cloves garlic, chopped
Thumb-sized piece of ginger, chopped
5 tbsp Korma paste
50g ground almonds (optional)
400g plain or Greek yogurt
¼ tsp brown sugar
Small handful of coriander leaves.
Method
1. Blitz the onion, garlic and ginger in a food processor to make a paste.
2. Heat the oil in a large frying pan and add the paste. Cook out for about a minute.
3. Add the korma paste and combine with the onion paste. Cook for another minute.
4. Add the yogurt, ground almonds and sugar, stirring well as you do so.
5. Add the frozen Chicken Style Pieces and simmer for 12-15 minutes, stirring occasionally. Season to taste. If the sauce gets too thick, slowly add water to thin it.
6. Sprinkle coriander leaves over the plated Korma and serve with Basmati Rice and Naan.
Beef Style Stroganoff
Serves 4
Ingredients
300g pack of Meet the Alternative Beef Style Pieces
25g butter
1 tbsp sunflower oil
550g mushrooms, sliced
1 large onion (optional)
1 tsp paprika
Pinch of chilli powder
50 ml white wine
1 tbsp tomato puree
100 ml vegetable stock
100 ml cream
Rice
Method
1. Heat the butter and oil in a frying pan. Add the mushrooms, onion (if using), paprika, chilli powder and wine and cook for about 10 minutes.
2. Stir in the tomato puree, vegetable stock and cream and add the Beef style Pieces. Bring to the boil and simmer for 12-15 minutes, stirring frequently.
3. Serve with rice.
