Move over rye bread and take a seat rice cakes, there’s a new snack option in town
Au revoir granary bread, it’s been nice knowing you. Sweet potato toast is the latest superfood craze to hit the office and we have joined the army of converts.
It’s exactly what it says on the tin: slices of sweet potato, toasted. Packed with vitamins, a good source of iron to support a healthy immune system and magnesium which has been linked to anti-stress properties, sweet potatoes have definitely earned their superfood status.
From mash to chunky wedges, we’ve been enjoying this delicious vegetable for as long as we can remember, but never have we tried it as a substitute for bread with a swish of chunky nut butter. But now we have and it’s fair to say that we’re disappointed we never thought of it sooner!
Let’s get cooking
Dani Tucker, author of The Social Kitchen , explains three ways you can create the perfect sweet potato toast every time.
1 Toast it
Pop slices of sweet potato into the toaster until cooked
2 Bake it
Place slices of sweet potato on a baking tray. Drizzle with sunflower oil and sprinkle with rock salt. Bake for 30 minutes
3 Grill it
Place slices of sweet potato on a baking tray. Drizzle with sunflower oil and sprinkle with rock salt. Grill for five minutes
Tasty toppings
There are many ways to enjoy sweet potato toast. Here Dani shares her favourite four varieties.
1 Cream cheese with smoked salmon, a drizzle of lemon, thinly sliced red onion and chives.
2 Sliced avocado with a sprinkle of sesame seeds and rock salt.
3 Peanut butter with sliced banana, topped with poppy seeds and a drizzle of honey.
4. Greek yoghurt with a few raspberries and blueberries, chopped hazelnuts scattered on top and a light sprinkling of cinnamon.
